Instructions
Step 1
Fry bacon in batches until almost crisp. Save grease for later use.
Step 2
Cut potatoes to a large dice. Cook in large pot of boiling, salted water to desired firmness, about 10-15 minutes.

Dice hard boiled eggs about same size as potatoes.
Step 4
Place all main ingredients in a large bowl.

Step 5
Whisk 6 eggs until well combined. Add remaining sauce ingredients, continuing to whisk until combined.
Step 6
Heat bacon grease, slowly adding the sauce while stirring continually. Bring to a boil, then reduce to simmer. Simmer until thickened.
Step 7
Pour over potato mixture & stir to coat. Serve hot or cold.
