The rice for this dish took a bit longer to cook than the recipe indicated, which caught me a bit offguard. I had to let things simmer a bit longer after I had added the kale, which meant I had to overcook the kale to salvage the dish.
Overall though the flavors here are good! I made some chicken thighs on the side to layer on top after plating, and I'm glad I did as I don't think this dish would've been as successful without some protein.
