Hi April! To replace the salmon with chicken, I’d follow the same instructions (but the chicken will probably take longer to cook). You could also make the chicken however you’d normally cook it and then just add it to the sauce at the end. To lower the sodium, you could try using frozen artichoke hearts instead of the marinated ones—just sauté them at the same stage as the tomatoes until they’re slightly browned. You could also reduce or omit the Parmesan cheese. Adding a little bit of lemon juice to the cream sauce at the end may also enhance the other flavors without you needing to add salt. These are all just suggestions—haven’t tried them myself!
