I used n’duja, which feels like a must. I was able to get it at a very typical grocery store in the US east coast. Also used very good noodles purchased at a farmers market. Used cheap old Kraft grated Parmesan with the egg yolks. It turned out very good! N’duja made it not as spicy as I feared. The recipe should have you cook the noodles first before starting the garlic and n’duja/chili with reserved water. Next time, I will toss some fresh herbs to complete - basil and parsley seem like a good finisher.
