It's a bit bland, but still tasty. If you're not vegetarian I'd recommended using a bit of bacon grease and/or bacon itself to flavor the onions and mushrooms a bit more and perhaps halve the vegetable broth, subbing in a dry white wine for the other half. If using store-bought shredded parmesan, I'd recommended chopping it up a bit more with a knife to get it to incorporate more evenly, mine ended up a bit chunky.
