Edit: I made this soup again and replaced half the soy sauce with miso paste and it was really delicious!! Also great with a scoop of nutritional yeast.
I used red lentils because that's what I had on hand, I halved the recipe except for the garlic and peas (I used 4 large cloves of garlic and a full cup of peas), I had to use a vegetable bullion cube instead of stock, and my grocery delivery person gave me something called "strong mustard" instead of dijon, but the recipe turned out great anyway! It was very satisfying, filling, and warming. Perfect for a chilly winter day and super easy clean up. Tasted even better the next day.
