I am not a fan of zucchini, and I have never tried riced cauliflower but I am trying to be healthier, finding easy ways to stick to healthy eating and these definitely fit those categories.
I made a couple of changes based on the feedback of other users. I tried the riced cauliflower. ( I couldn't tell the difference).
I added pickled jalapeno's and used medium salsa with a dash of cayenne. I like spicy flavors.
Without the rice, it was spicy, but delicious. I cooked the zucchini 5 minutes short since I knew I was going to cook them in the toaster oven for the next 4 days and they turned out perfect in the toaster oven. Zucchini wasn't too mushy.
I think I will probably add some chorizo sausage or fool around with guacamole crema. All in all, this will become a staple for me, just the toppings might change.
