WIP!
1. Test:
Changed oat flour to 50:50 white flour: fine oats
I doubled the amount of baking powder and baking soda
Maple syrup only 40g instead of 50g
Into half of the muffins I added chopped walnuts
Into other half I added chopped frozen strawberies
- Walnuts seemed to be better choice. Blubeberies might be also good. Overall I would like the muffins to be a little bit more moist.
2. Test:
- Made oat flour from rolled oats with hand blender.
- Used +20g of protein. I am thinking about using 50:50 whey:casein, which is supposed to help with dryness of muffins.
- Used honey instead maple syrup.
- Used +60g of yoghurt

- added extra squirt of chicory sweetener
- about 10ml of milk
- sqeeze of lemon juice
- cca 10g of psyllium
+ few extra ml of water
- added chocolate and bluberies
-This is the best iteration so far
