Ingredients

Instructions
Step 1
In a large bowl, mix together the mashed bananas, Greek yogurt, honey or maple syrup, vanilla extract, and eggs until well combined.
Step 2
In a separate bowl, whisk together the oat flour, protein powder, baking powder, baking soda, and salt.
Step 3
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix. If you're using any mix-ins, fold them into the batter at this point.
Step 4
Grease a muffin tin or silicone muffin cups that can fit inside a heavy-bottomed, lidded pan or skillet.
Step 5
Fill each muffin cup about 2/3 full with the batter.
Step 6
Place a trivet, a round wire rack, or a few crumpled rings of aluminum foil at the bottom of the pan to create a heat buffer.
Step 7
Preheat the pan with the lid on over low heat for a few minutes. (for normal baking 165C)
Step 8
Carefully place the filled muffin tin or silicone cups on the heat buffer inside the pan.
Step 9
Cover the pan with a lid to create a steamy environment that helps the muffins cook through.
Step 10
Cook the muffins over low heat for about 20-30 minutes (for normal baking cca 12 minutes) or until a toothpick inserted in the center of a muffin comes out clean or with a few moist crumbs. The cooking time will depend on the size of the muffins and the thickness of the pan, so you might need to adjust the time accordingly.
Step 11
Once the muffins are done, carefully remove the muffin tin or silicone cups from the pan using oven mitts or a thick towel, as they will be hot.
Step 12
Let the muffins cool in the tin or cups for a few minutes before transferring them to a wire rack to cool completely.
Step 13
Remember to check the muffins occasionally during cooking to make sure they are not overcooking or burning at the bottom. Adjust the heat if necessary. Enjoy your protein banana muffins!
