I have made this recipe at least half a dozen times. Compared to other vegetarian "meatloaf" recipes I've tried, this one is the best, and it's healthy and dirt cheap to make! It tastes very much like the a meat-based loaf. I even make meatloaf sandwiches with the leftovers and it is really good! It would make an excellent "burger" as well....tastes great with ketchup and mustard, etc. You don't need Monterey Jack cheese. Any cheese you have will work fine but I use an aged cheddar.
