I use recipes for inspiration. Doubled recipe, altered w/butter for coconut oil, added 3tbs molasses instead of fruit spread, used 12oz apple sauce and 4oz banana baby food because I ran out of apple sauce, added 3tsp Penzeys Vietnamese Cinnamon and 1Tbsp coconut sugar, and stirred in 2/3c pepitas, 2/3c white chips, 2/3c butterscotch chips, and low sugar Craisins. Scooped cookie dough generously, perhaps closer to 1.5 or 2Tbsp. Baked for 20mins and still chewy center.
