This turned out wonderful! The dressing a a bit tangy, so I went light with it, but the sweet beets really tone it down.
I went ahead and peeled the beets, much like a potatoes before dicing, since I’ve never cooked beets before. Definitely go to the bottom for the actual recipe card because it’s a little confusing otherwise. Enjoy.
