I cut the recipe in half and made muffins vs a loaf. It turned out really well! I used whole wheat flour and I added 1/4 cup of milk to the batter. I reduced the amount of molasses and maple syrup. I did 2 tbs of each and found it sweet enough. To compensate for the liquid I added 2 more tbs applesauce. I only got 5 muffins but they rose really well and tasted great. A touch dry but really flavorful.
