Chicken was really moist and tender. I subsituted coconut aminos for soy sauce because that's what I had on hand. I also added italian seasoning and garlic powder to the tomato and mozarella mixture. I enjoyed the sauce and was surprised that such a short marinade time packed in that much flavor. I would probably leave out tomatoes next time - no one here likes roasted tomatoes. The kid cleaned his plate, but SO wasn't a fan - he's been really picky lately.
