Really enjoyed making this, a mellow yet flavoursome dish. The trumpet mushroom I grilled but added in the enoki at the very end. I made a chicken and mushroom stock to cook my risotto. Simple but also a huge undertaking as it took me a while to make sure I got everything right down to the stock. Delicious. Would definitely recommend.
