Mother Earth pearl barley risotto

Hand picked mushrooms with purple broccoli florets. Enjoyed making this, needs some fine tuning but all in all I’m proud of it. This was made entirely from scratch with no added salt.

Special occasion

Really enjoyed making this, a mellow yet flavoursome dish. The trumpet mushroom I grilled but added in the enoki at the very end. I made a chicken and mushroom stock to cook my risotto. Simple but also a huge undertaking as it took me a while to make sure I got everything right down to the stock. Delicious. Would definitely recommend.
