I made this tabbouleh salad for dinner, last night, as I often do in the summer months when tomatoes and cukes are at their peak. It's the perfect light supper for a warm evening, and The Girlfriend and I enjoyed it with some chilled white wine while sitting on our balcony and watching the day turn to dusk.
I did add a minced clove of garlic and some pan-toasted pine nuts to this fine recipe, and I probably used a bit less than the full volume of dressing. Apart from those minor additions, this recipe is perfect as-is. Highly recommended!
