← Replies in Vegan Chickpea Flour Pancakes Recipe

The pancakes have a very unique savoury flavour. I didn't like it by itself but fruit they are delcious. The pancakes are very dry so I am glad that I added berries (I would definitley make more next time !). This is my first time making thick american style pancakes and I was suprised at how well they turned out. I made double the recipe for two people but it only made 2 1/2 pancakes each (I think they were intended to be mini pancakes but I used a big ladle to portion the batter) .However they were very filling due to the protein content. I am looking forward to trying them again 😊

To make them less dry, use more liquid, enough for it to be a runny batter when first mixed, then let sit for at least half an hour. It will thicken as it sits, but the extra liquid will make them stay more moist.

You could also add in apple sauce!
