So yummy and versatile! I ended up just using kale as my green and adding more veggies than are called for. I think next time I'll try mixing up the greens a bit to diversify the flavour. You could also add some fresh herbs or other spices. Pairing this with some pan fried or baked tofu and some fresh peas or other crunchies is just perfect! I added a bit of a green goddess dressing for a little extra moisture also! If you wanted to make it spicy you could definitely substitute the bell peppers for something spicy. Also would be perfect to double and have leftovers!
