I doubled the recipe and modified by:
-using canned green enchilada sauce, -adding 1 tsp each of chili powder, cumin, and garlic powder to the veggies
-adding a diced red bell pepper instead of one of the zucchinis
- using 1 can each of black beans and kidney beans
-adding shredded chicken
-adding Greek yogurt layers for creaminess
It turned out great!
