Fresh, never frozen ahi tuna loin is available in Central Texas at HEB, Central Market, and Costco. The prices range from the highest at CM (up to $29.99/lb) to the lowest at Costco (as low as $14.99/lb). Seafood departments sell them as steaks, but you can ask them for a not-yet-sliced loin. Do not go for frozen ahi tuna steaks available at Trader Joe’s and HEB. It’s much cheaper, but frozen tuna doesn’t make good jerky.
The secret ingredient is Mexican Coca Cola made with cane sugar. I was curious what else can be used to substitute it: my conclusion — nothing. So be it.
