Instructions

Step 1
In a bowl, combine all marinade ingredients.
Step 2
Slice tuna loin 5mm (0.2") thick and submerge slices into the marinade. Marinade for 1 to 2 hours at room temp. (Less time will make the fish less salty. More than 2 hours will destroy the texture of the fish.)
Step 3
Strain the marinade. (You can discard it or boil it down to a syrupy sauce to use for other preparations.) Pat tuna sliced to dry, brush or spray them with avocado oil, and dehydrate for 4 hours at 155F.
Step 4
In the end, tuna slices are brushed with hot honey, sprinkled with sesame seeds, and dehydrated for an additional 30 min. (I don’t do it.)
Step 5
Let dry tuna cool down to room temperature, place in a closed container, and refrigerate.
