After making the rice from this recipe a few times, it is still delicious! My only complaint is that it's quite oily so from now on I will probably be cutting back the additional coconut oil. I have been using normal coconut oil since that's what I have currently so that could also be a reason it's too oily.
I've made this a few more times without any additional coconut oil and normal coconut milk. It has been delicious and definitely hasn't needed the extra oil! I don't think I'd add in much, if any, even if I was using light coconut milk.
