It was delicious! I added some baby spinach, boiled green beans and left over roasted pumpkin from the night before (highly recommended -adds sweetness). I opted out for the spring onions and tzatziki however the hummus was enough to bring the ingredients together. I also used coriander instead of parsley which works really well. And if you want to get fancy, add some goats cheese or feta too. I had plenty of left over salad which I used to prep extra meals. I'm definitely making this again!
