Used 2x chicken breasts, 1 courgette, 1 yellow pepper, 3 small carrots, 1/2 red onion, garlic.
Used ground ginger sprinkled on top rather than fresh. Also chucked in chilli flakes (gave it a nice kick).
Around 60ml chicken stock, I used less than 60ml soy sauce (but can add to taste)..
It made at least 3 me-sized servings. 2 I put aside, the other I chucked noodles into (and served alongside egg fried rice)!
