I swapped the cheddar for Mexican blend cheese and a can of beans for bag of frozen corn and let the chicken/beans/corn etc soak in the sauce for a few hours. Pro tip - you can easily make shredded chicken in the crockpot; for this recipe I added a can of diced tomatoes with green chilis to the shredded chicken and it was perfect!
This was a massive hit and will be a staple in our family Freezer. Serve with tostadas or on taco night!
