Thawed the chicken breasts a bit too early and had to make this Thursday night. I didn't get to have any until Saturday because I had to fast for a procedure. (Didn't see low sodium ketchup, so I got no salt added ketchup.) Also shredded the chicken.
So, in theory this review could be colored a bit by the fact that this is the first time I've eaten in 40 plus hours, but I really enjoyed this recipe. When I had a taste of the sauce after cooking it, it felt the tiniest bit bland. I didn't get as much spice as I would have liked, but the sweetness was on point. In addition to the fresh spinach that I added to the chicken as it warmed and the rice I made to serve everything on, I coated my bowl in Thai chili sauce to make sure I got a little extra flavor. That said, after heating it up and having the spinach and rice flavors as well, I don't think I noticed it being bland nearly as much as I thought I had. Or it could have been the Thai chili sauce too.
I definitely like to make this again, and not in the too distant future. That said, I think I'll try to add a little kick to the sauce that I bathe the chicken in as it cooks in the crock pot. But definitely enjoyed this recipe and will be making it again soon.
