Sed note: Salted fish / anchovies is a must. 2x the recipe (egg plant needs to be cooked one batch at a time, 3x might be ok). 2 eggplants per batch. Cut the eggplants while the previous batch fries. Cut in strips, then coat in cornstarch one batch at a time. This recipe is smoky; open the window and turn on the vent. (Can sous vide or boiled works?)
