Used all dry herbs since i didnt have Parsley or rosemary. I have made so many roast chickens and this one is my favorite so far. I skipped broiling because it looked crisp already after 1hr 10min. Cooked with onion, carrots, and celery. Will add potato and green beans next time to soak in all the amazing juice.
Served with roasted zucchini and rolls.
Currently making a delicious broth with the carcass now.
