I wanted more vegetables and spice so I added the following:
4 cloves minced garlic
1 bell pepper chopped
1 jalapeno chopped
8 oz mushrooms chopped
1 Tbsp smoked paprika
1 Tbsp cayenne pepper
1 Tbsp Tapatio hot sauce
topped with:
shredded parmesan cheese
shredded ghost reaper cheese
Note: I did not use a full cup of water. I added enough water to obtain the desired consistency. With the addition of extra vegetables I did not need to add extra tomato sauce or paste.
Update: I added about 1 Tbsp vinegar after simmering just before serving to enhance the flavor. It turned out great! I will also add tomato chunks next time.
