So I did a Greek-Mexican fusion spin of this recipe. I used Dave’s killer bread and drizzled extra virgin olive oil on the toasted slices. Lime or lemon were not included as I personally didn’t feel like it added anything. Generous cilantro and sliced tomatoes were added with feta (instead of queso fresco/cotija) for a Greek flair. I wanted to try adding an over medium egg and bacon with a Bloody Mary for a brunch flair. The dollop of Greek yogurt and like for the final Greek Mexican fusion.
