Solid recipe but tame as written, this begs for more flavor. I made a larger batch because we had more than 6 oz of shells, so once I ran out of spinach I mixed some sundried tomatoes and pesto in with the remaining cheese, and these went over well. I would add garlic powder, onion powder, and more black pepper too. I used nonfat cottage cheese and part-skim shredded mozzarella but would probably want shredded pecorino romano for more bite next time. Also, shells should really be almost submerged in sauce/water mix so that the tops don't burn.
P.S. This is not enough food for 8 people, don't trust the government (haha) to determine how much a hungry teen and his hungry dad can eat at the end of a long, cold week 😄
