Honestly, I would have very happily eaten another bowl of it if I'd had room! Added a bit of garam masala. Used canned lentils (halved the stock and only boiled for 5 mins) and light coconut milk. Reminiscent of a Thai curry with the coconut milk, yet not quite. Just totally yum 😍
