Okay holy goodness this was good. I LOVE me some cornbread, especially with a big pat of melting butter on top.
I only had one box of Jiffy box mix so of course I halved what the recipe calls for. I used a round cake pan with parchment paper lining to cook.
Did 400° for 17 minutes, then let it set on the stove for 5-10 minutes to cool before cutting and serving.
Seriously, turned out so soft and moist. I'll never try another way again. This was bomb dot com. Slightly sweet but not overpoweringly so. Even my 4 year old asked for seconds. Still working on the 2 year old. 😂
