Wow! These thick cut, boneless, center cut pork chops came out AMAZING.
Did not stray from the recipe much at all but I did double the rub because I had 6 chops about 5-6 Oz each and 1” thick, glad I did. There was maybe a teaspoon left after coating the chops. I did make the apple and onion sauce in the notes which came out delicious. I sliced up a honey crisp apple and yellow onions.
I only seared the chops 3-4 min on each side at a Med-high heat in my cast iron skillet and finished them in the apple and onion sauce at a simmer for about 4 min while basting. I like my chops with a slight pink color in the center and that’s exactly how they came out.
I would make these again without hesitation.
