Depends on when you added the lemon juice. If you spritzed it over the mushrooms before cooking, it would keep them from darkening too much or taking on a gray color. If you drizzled them after cooking, it would enhance the vibrancy of the filling. I might try doing both. Spinach + mushrooms + lemon = win
