I had two bananas going brown, so banana bread it was!
- I only had plain flour and bicarbonate of soda (no baking powder) so that's what led me to this particular recipe.
- Used mainly caster sugar, but a bit of granulated too.
- Used natural Greek yoghurt.
- Used a handful of (slightly old) blueberries, but forgot to coat then in flour first...
- Don't own any cake or loaf tins yet (new home), so used a roasting tin - being slightly large, the mixture was spread fairly shallow...
- Baked at 180°C - removed after 24 minutes when golden brown all over the top.
It was a little soggy on the bottom, but actually the texture was great and it tasted pretty damn fine!
