Good base for homemade ramen. I couldn’t find dried mushrooms anywhere, so I subbed fresh ones and added them before the broth. To give the broth more kick, I added soy sauce, fish sauce, and some crushed red pepper while it was simmering. I skipped the shredded carrots and subbed spinach for the kale. Next time I think I will reduce the amount of ginger and try bone broth in place of the regular broth and water.
