Why brown sugar vs other sugar? Just to give more of a browning to reduce the soy sauce? Trying to reduce sodium here! 😎

Brown or dark brown sugar just has a richer flavor, so I am happy to use less of it and get a similar result. This one is property high sodium and I don't think there's a ton that can be done to change that. :/
