Everyone loved it. It's hard to please a family of 5, but this one is a winner!!
I made double the amount of Mexican spice. Marinated the chicken in one lot of the spice and then mixed the other lot in with the chicken stock.
Can't wait to make it again!
It did take longer in the oven than the recipe said, but it was worth the wait.
