So delicious. I suppose it makes about 4 servings, but my husband kept coming back for more. There's probably enough left for one lunch. We love the spicy/sweet juxtaposition, so I added liberal amounts of crushed red pepper and a very conservative pinch of sugar and a drizzle of honey to cut the acidity/balance of the tomatoes and balsamic vinegar. Served with diced potatoes roasted til crispy and seasoned with olive oil, butter, garlic powder, parmesan cheese, crushed red pepper, Italian seasoning and salt and pepper. Amazing dinner!
