ya kno, sometimes the joy of cooking can just be the journey towards a different sort of scrumpti. after reading all the notes I didn't feel bad about using what I had on hand: 5.8lb boneless loin roast.
total citrus: juice of 1 lime 3 oranges + sauv blanc upto 1-1\4C and SOME of zest, im peppy enuff ;), rest per recipe, oh and ESP go for crispy at end of cooking.
I did whole cook in oven 3hrs @325°F, then uncovered 20mins.
No leftovers.
