I had to add broth at the end, cover and cook a bit more for sweet potatoes and quinoa to be done. Tasty and healthy.
[Second time around I added 2 c of broth instead of reserving a cup. After 12 min added kale and parsley (still soupy and quinoa not cooked). Covered and cooked another 5 min. Turned out perfectly. Still drizzled bowls with tahini when serving.
The second time I made it I put some tahini on top. This made it less dry and really delicious. Plus it boosts the protein a bit.
