It was a lot of work and the sweet potato I used needed a lot more time. At some point me and my fellow diners got so hungry/frustrated that I threw the hard core that hadn't cooked yet in the microwave to just be able to start on the dough.
The result however was very pleasing. I did mess around with the proportions a little to make it to my liking and added a little gran padano as I'm not eating vegan and it was just there in the fridge anyway and left the feta cheese out. (This was recommended in the reel as a topping).
Personally I would also make the gnocchi even smaller (divide the dough in 8ths maybe and then roll/cut) for a more pleasant eating experience texturally.
However I did really enjoy the result, it was a lot better than I expected and the leftovers were just as good the next day.
Will for sure make again, but I might cut the sweet potatoes in half before cooking or take more time for that first step.
