Loved this recipe! I made my own chipotle yogurt dressing because Iām not a big fan of Mayo. If anyone else is interested, I included the dressing recipe in the edited version of this sweet potato salad recipe.
I also made a few other tweaks which are in this edited version of the sweet potato salad recipe:
-fresh lime
-20 oz sweet potatoes
-4 cups kale
-cooked sweet potatoes in the bacon grease
-cooked onions and bell pepper a bit longer until they started to caramelize
