Ingredients
3 servings
1.5 Tbspcooking fat
of, choice, ghee, avocado oil, olive oil
20 ozsweet potatoes
cubed
1red onion
small, sliced
1bell pepper
small, diced
4cloves garlic
minced
4 cupskale
roughly chopped
4 slicesbacon
thick cut
1juice of lime
salt
to taste
black pepper
to taste
Chipotle Greek Yogurt Dressing
Instructions
Step 1
Cook bacon in skillet over medium heat. Remove bacon and set aside. Add cubed sweet potatoes and cook for ten minutes, stirring occasionally until they are cooked through (about 10 minutes). Set sweet potatoes aside
Step 2
Add 1 Tbsp. Of canola oil, diced pepper, and sliced onion to skillet. Sauté for another 10 minutes or until onions begin to caramelize around the edges. Add garlic and cook for an additional 3 minutes.
Step 3
Then add kale and sauté until kale is wilted. Squeeze lime juice on top and stir.
Step 4
Return bacon and sweet potatoes to skillet and stir everything together. Divide into 2-3 servings and serve warm! Top with desired amount of chipotle dressing and reserve the rest for later use.
