I didn't have fire roasted tomatoes so I used a can of tomatoes/jalapenos and it was yum. I think it would have been too bland otherwise. Also, this was the first time I ever tried poaching eggs in the microwave. It was pretty fast and easy, but I overcooked them just a tad. We ate every scrap and I will make again.
