What I changed:
Doubled the seasoning
Used Greek Yogurt instead of Coconut Milk (this will make it vegetarian, not vegan)
Nixed the walnuts
This recipe was GOOD. Like surprisingly good. I used penne for the pasta and it did its job as a vessel. I'm usually not to into lentils but I'm trying to see if maybe some recipes will change that and this is an awesome way to eat them. I made this for dinner and then make a makeshift shakshuka with it the next morning. I 100% reccomend this.
