So good! I prepped it a bit differently. I threw the onion in with the half cooked bacon and added mushrooms at this time as well. Removed it all to a plate. Then browned the chicken. While all that cooked, I had frozen broccoli and cauliflower in the oven thawing and cooking at 400. I took the sheet pan out and topped the broccoli and cauliflower with the chicken. Then topped the chicken with the bacon, mushrooms and onions. Then poured the drippings from cooking the chicken all over. I topped it all with a drizzle of mustard, mayo and broth blended into a sauce. Amazing flavor and the veggies soaked up the sauce well.
