Yummy! I still needed all the salt despite not using reduced sodium broth.

2 tbsp oil, high heat. Cook 1 diced π§
, diced red π«, and 2 π§ cloves for 1 minute.
Add beef, brown & break up. Add 2 Β½ tbsp π
paste, 1 ΒΌ tsp π§, 1 tsp π§
powder, 1 tsp oregano, Β½ tsp cumin, Β½ tsp pepper, and ΒΌ tsp cayenne. Cook for 1 minute.
Reduce heat to medium, add 1ΒΌ c. π and 2 c. low sodium π broth. Mix, then stir in 2 cups frozen veggies and a bay leaf π.
Place lid on, reduce heat to medium-low to keep it at a gentle simmer. Cook 12-15 minutes (maybe longer) until all liquid is absorbed (tilt π² to check). Rice should be just cooked, but still wet.
Remove from heat, toss 3 big handfuls (~3oz) baby spinach and replace lid to wilt.
Rest 10 mins, fluff π and mix the spinach with a fork.
